Chickpea salad with eggplant, heritage tomatoes, mint and basil
Scallop ceviche with apple, radish and yuzu
Jamon with celeriac remoulade, pickled beetroot and walnuts
Moran’s family beef carpaccio with tartare, gaufrette potato and black garlic
Crisp skin pork belly with pickled green tomatoes, bois boudran and celery salt

Main Course
Pan fried King salmon, pimientos, chat potatoes and green olives
Roasted barramundi with Jerusalem artichokes and salsa verde
Pan fried chicken with zucchini, saffron onions and pinenuts
Roast rack of lamb with green beans, pancetta and hazelnut salad
Char grilled O’Connor sirloin with colcannon and watercress
